Butternut Squash Chile Lime Soup

Is Butternut squash an item you walk past either in your super market or farm stand and think, nope takes too long to cook..

Do you have an Instant Pot? Butternut squash was made for an Instant Pot!  To cook the butternut squash in Instant pot just cut the squash in chunks, place the trivet in bottom of the instant pot container, add the squash do manual for 5 minutes + time for natural release and it will be super soft and delicious!

Or you can purchase the already cubed butternut squash in the market and you can make this in very few minutes.  A 2 lbs butternut squash will make 4 cups of soup.

Since butternut squash is naturally sweet marrying it with some zing from lime

It is a lime, just the skin is well lemony looking 🙂

and zip of spice created a fabulous combo.  I received several butternut squash(s) from a client that has a huge local garden-thank you Gary!  Besides butternut squash, he also gave me a bag of limes so that was the creation for this soup.  And yes the pic above is a lime.

 If you are wanting a more traditional butternut squash soup- use this one that you can create in your cast iron skillet.   It has apple, onion and it all gets blended together for a silky smooth soup with a bit of coconut cream.  I made that soup last week and my family has mentioned several times how good it was.  

Speaking of blending- an immersion blender is excellent for making this soup perfectly smooth. Besides the lime and chile flavors you just need to add a bit of vegetable broth and it is ready to eat!

Butternut squash chile lime soup is marvelous accompaniment to Mexican food, such as black bean tacos.

Easy Butternut squash soup recipe that has lime and chile flavors and that is healthy too!

  • 2 lb butternut squash, seeded, cooked and rind removed* see notes to cook in Instant Pot
  • 1-1/2 cups vegetable broth
  • 1 lime, zest then juice the lime
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tsp tajin seasoning* if want less spice use 1/2 tsp
  • 1-1/2 teaspoons kosher salt


  1. In medium saucepan add cooked butternut squash, broth, lime juice and seasonings. Using immersion blender blend soup to puree. Or use blender.  Heat over medium heat until hot.  Serve with garnish of lime zest.  

Recipe Notes

To Cook Butternut squash in Instant Pot:

Put trivet in bottom of Instant Pot container.  Add 1 cup water.  Clean outside of butternut squash, cut butternut squash in large chunks.  Place in Instant Pot.  Cook on manual setting 5 minutes with natural release 10-15 minutes.  Remove inner container with pot holders.  Allow butternut squash to cool enough to handle.  Using large spoon scrape butternut squash from rind.

I love this zester because it is strong and sturdy- zest lime, lemon; I use this zester for making my famous lemon cottage pancakes or waffles.
