Do you like a challenge? How would you modernize and make Apple Waldorf salad, vegan style… without any mayo? Sure you could use vegan mayo but here is another version.. no oil, no mayo needed, yes, its creamy in a surprising way… Waldorf salad isn’t just for Thanksgiving, this is great anytime with the addition of kale, it makes it so easy and healthy. And it can be a lunch in a jar 🙂
What kind of apples do you like? I’m fond of Fuji they are crisp, crunchy and sweet. Organic is super important for apples as well as celery. You can still find some Fuji apples in the markets and they are still crunchy.
This salad comes together quickly, it is so great for us and it is filling because of the healthy fat and protein from the walnuts. The modern styling is adding kale. After all we need it for scrubbing our intestines clean and its good for our eyes too. I was reminded of this by my ophthalmologist this week, as she said there are three things we can do to help keep glaucoma in check, besides taking prescription eye medicine…daily do these: exercise (walk) 20-30 minutes daily, eat leafy greens such as kale and drink a cup of coffee or tea.
Waldorf salad usually has cut grapes and I’d say by all means add them to your salad, if you want to take a few more minutes to cut them, with the apples and raisins it is a sweet salad.

Apple Waldorf Vegan Salad
Healthy Vegan Waldorf Salad with kale and celery, it is creamy without mayo and delicious!
- 2-1/2 cups Organic kale, washed and chopped, remove middle stem Russian or Lacinto are my favorites
- 1 large Organic Fuji apple, 1/2 of it chopped, other half chunked a couple of times, seeds core removed
- 1/2 cup Organic celery, chopped about 2 stalks
- 6 tablespoons walnuts, divided evenly
- 1/3 cup raisins, divided 3tbs for salad, 2 Tbs dressing
- 1 tablespoon dijon mustard
- 1 tablespoon red wine vinegar or apple cider vinegar
- 3 tablespoons water + 1 tablespoon if dressing too thick
- 1/2 teaspoon kosher salt
Place kale in medium bowl, add chopped apple, chopped celery, 3 tablespoons of walnuts, 2 tablespoons of raisins to salad. (reserve 1 tablespoon raisins for garnish).
Put remaining chunks apple, 3 tablespoons walnuts, 2 tablespoons raisins, mustard, vinegar, water and salt in blender. Blend until pureed. If needed add an extra tablespoon of water to thin the dressing.
Pour dressing over the salad and toss to combine. Garnish with extra raisins.
Put in 2 -16 ounce canning jars if desired. Enjoy!
