Chickpea Curry Waffles

When I was creating the rose flavored vegan dark chocolate cupcakes, I tried making them with garbanzo flour… didn’t like the way they turned out.. but it got me to thinking of other uses for garbanzo flour.

After all it is gluten free, high protein and so many nutrients.

In many cultures including the Indian culture it is traditional to scoop up your dal with naan and there is socca which is garbanzo bean flour flatbread from France. So why not waffles in America to scoop up your food?

Now let me introduce you to Chickpea Curry Waffles.  (I feel like I should have a curtain to pull back and the audience would go oooh!)

Chickpea Curry Waffles –

At least my tiny family audience said “ohhh, that is good!”, when they tasted this recipe.  Adults, grandkids they all tried it and gave it a thumbs up and asked for more.  It’s a bit freaky when a recipe turns out the first time you create it 🙂

Using both vegan egg and vinegar does two things; vegan egg binds and the vinegar adds extra lightness and crispiness to the waffles.

What to eat it with your warm spiced waffles?  Nibble on them plain,  whip up coconut cream unsweetened and dal is amazing.  I sauteed baby greens, made chana dal and oh yummy!   I’m fond of chana dal ( split chickpeas; except you don’t need to have them split) and here is my 10 minute recipe for them.  Just omit the rice in the recipe; that is suggested, you don’t need that with the waffles.   The divets in the waffles make it a natural for scooping up the dal.

Thinking of buying a waffle iron?  Be sure it is a great one, the one I have is excellent without being super expensive.   If you buy a cheap one it takes forever to complete one waffle and the quality of the waffles are not consistent.

Smell them? ahhh, I’m hungry!

Ssee the glass spice jars in the ingredients pic?  I really don’t like plastic and I get spices in bins…I found these glass spice jars and I am loving them!  They came with labels, chalkboard writer and a funnel.  

The recipe is easy to mix up and baked in a flash.  If you make my Chickpea Coconut Dal you’ll have a meal in a few minutes!

Chickpea Curry Waffles

Vegan gluten-free chickpea curry waffles with coconut cream are ready in 10 minutes and yummy to eat.

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes
Servings 2 1/2 waffle each

Ingredients

Wet Ingredients

  • 1/3 cup coconut milk, in can-stirred or shake can first
  • 2 teaspoons vinegar (either Apple cider or white vinegar
  • 1/4 cup water
  • 1 tablespoon oil avocado, olive or grapeseed oil
  • 1 flax egg total 3 tablespoons

Dry Ingredients

  • 1/2 cup garbanzo flour
  • 1 teaspoon dried parsley
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon Tajin seasoning or use chili lime seasoning or 1/4 tsp cayenne pepper
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 teaspoons cane sugar or other sweetener

Instructions

Preheat Waffle iron to medium high, on my waffle iron it was 5

  1. Put coconut milk and vinegar in medium bowl add water, oil and flax egg.  Stir to combine.  You will notice a few milk curds, this is normal activation process of the vinegar and milk.  

  2. In a separate medium bowl mix the dry ingredients together.  

    Pour in dry ingredients to wet ingredients, stir to combine.  Batter should resemble thick pancake batter.  May add 1 tablespoon at a time of extra water, you will not harm this batter by stirring it. 🙂

  3. Pour  batter into waffle iron,  the batter should almost reach edges of waffle iron.  If extra batter cook second waffle to use up batter.  Cook until crisp approximately 2-3 minutes.   

    Serve with dal, sauteed greens and drizzle of thick coconut cream.  Enjoy!

Recipe Notes

You can easily double the recipe for larger portions.

Flax Egg Instructions:

Mix 1 tablespoons of ground flax seeds and 3 tablespoons of water together in small container; set aside.  (you will use 3 tablespoons for this recipe).
