Rose flavored Dark Chocolate Vegan Cupcakes

You know what? Mother’s Day is May 13 this year, and here is an easy amazing dessert.   You can keep it vegan and blow her socks off, she will think you worked for hours creating it!

After all how many kids create dark chocolate cupcakes with hint of rose flavor for their mother’s?  The rose flavor is a gentle waft of smell.  You don’t have to add the rose flavor but it sure makes these easy cupcakes extra special!

This would also be great for a tea party.  The cupcakes are moist, so yummy and they are easy to put together.

I used unsweetened cashew milk in these because it is very creamy and it has a very mild flavor that would not compete with the rose flavor. Almond milk would work too.  Botanical culinary dried rose petals were used to flavor the cupcakes-how?  Steep the cashew cream and rose petals together by heating the milk with the rose petals.

Let sit to cool then strain the rose petals and use the lightly scented milk.  You could use a touch of rose water instead.  The cupcakes go together simply with bowl for dry ingredients another for the wet ingredients.

Combine them and you are ready to bake.

This is where I purchased my rose petals, I bought the combo packet as I will be cooking/ making tea with the other culinary flowers.  Of course, if you have a garden of roses, that are pesticide free use those, you’ll just need to use more as they will be fresh.  Taste your roses some have spicy taste others taste like rose perfume. 🙂

ahhh can you smell them?

I tried using coconut cream, but the coconut flavor was too strong for these delicate cupcakes.  If you are not using rose flavoring then sure use completely chilled can of coconut cream.   Be careful of the brand of coconut cream, some do not whip well.  Two that work are: 365 organic coconut cream or Sprouts organic coconut cream.

What works best for these cupcakes is to use Daiya plain cream cheese for the frosting.

want a bite?

It has a nice shine to it and my grandkids loved the cupcakes with this frosting.

I used Wilton Color Right System to color the frosting (not necessary but so pretty) and it is amazing! Ive tried natural dyes but I have not found any that are easy to use or give a precise color.  This system is so fun and the color was just what I was going for.  You can adjust the colors and it shows you exactly what final color will be.

Rose flavored Vegan Dark Chocolate Cupcakes

Ultimate dark chocolate cupcakes flavored with the light scent of a rose garden.

Ingredients

  • 1 cup unsweetened cashew milk* see recipe notes below
  • 1/4 cup dried culinary rose petals* or use 1 teaspoon rose water
  • 1/3 cup avocado oil or grapeseed oil or applesauce
  • 1 tablespoon white vinegar or apple cider vinegar
  • 2 teaspoons vanilla extract
  • 1-1/2 cups all purpose flour or gluten free flour
  • 3/4 cup white cane sugar
  • 1/3 cup unsweetened cocoa powder (great brand is Guittards or Droste
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt

Frosting

  • 1 cup/ 8 ozs Vegan Cream Cheese, softened
  • 3 tablespoons Vegan butter, softened
  • 2-3 cups powdered sugar
  • 1/2- 1 teaspoon rose water* optional/ use 1/2 tsp then taste if not flavored enough use more
  • 1-2 teaspoons cashew or almond milk, as needed
  • 1-2 drop(s) (optional) pink icing coloring

Instructions

  1. Preheat oven to 350 degrees.  Line 12 cup cupcake tin with cupcake liners.

    In medium mixing bowl, add liquid ingredients, stir to combine. 

    In separate mixing bowl add dry ingredients, mix well.  

    Gradually add dry ingredients to the wet ingredients and whisk just until smooth. 

  2. Put batter in cupcake liners filling 2/3rd's full.  

    Bake for approximately 16-18 minutes until toothpick inserted comes out clean.  Cool on wire rack.

Frosting

  1. Using hand mixer, beat cream cheese, butter, powdered sugar, rose water or vanilla, milk and icing coloring. Mix until smooth and shiny. If needed add additional teaspoon of milk.  

    Using piping bag pipe frosting onto each cooled cupcake.  Enjoy!

*If using dried rose petals to infuse flavor-follow these instructions-Heat cashew milk and mix in dried rose petals  in small saucepan.  Allow to come to a simmer, turn off heat and cool.  Once cool, strain out the rose petals.  If cashew cream is less than 1 cup  straining then add additional cashew cream to make 1 cup.  Follow rest of directions to make cupcakes.

1. Guittard cocoa Rouge is marvelous flavor and quality 

2. I used this avocado oil, it has minimal flavor so it is great in baking and it is good for us.  Alternative to oil- use unsweetened applesauce same amount.  

3. This food coloring was great for getting just the right hue of pink that I was looking for.
