Mago Ricotta Parfait Recipe

Want a quick and super fast dessert that has minimal fuss and minimal sweetener?   Mango Ricotta Parfait is 3 minutes to prepare and then yes, you are eating it!

Of course you don’t have to wait for dessert, breakfast, snack anytime really is good to eat it.

Full of protein… you can use coconut vegan yogurt instead of the ricotta too.   The three minutes include opening the refrigerator pulling out the Ricotta.  Of course you can use other types of fruit, I just happen to love mangos and it makes this feel extra decadent.

You could also use:

  • berries,
  • peaches,
  • plums or
  • apricots would also be great choices.

Mix in a bit of honey or other natural sweetener, zest a bit of lime, lemon or orange (if you so desire) and you are done!

Mango Ricotta Parfait

Mango Ricotta Parfait takes only moments to prepare, only minimal natural sweetener and it is ready to eat.

Servings 1

Ingredients

  • 1/2 cup ricotta* coconut yogurt option for vegan
  • 1 tablespoon raw honey
  • 1 tablespoon (optional) lime zest, reserve a few zest for garnish (1/2 of large lime)
  • 1/2 mango cut in slices, all but three slices cut in cubes
  • 1 (optional) ladyfinger cookie or other cookie

Instructions

  1. Mix Ricotta and honey or other sweetener together, in small bowl. 

    Add all but a few sprigs lime zest (reserve bit for garnish), blend well.

  2. put a couple of mango cubes in bottom of parfait glass or small jar

    put 1/4 of ricotta mixture in next,

    keep layering it until the top. Add sliced mangos and lime zest garnish.

    Serve with a ladyfinger or other cookie.  

Recipe Notes

If making for 3 people or more use a whole lime for the zest.
