Kick up your heels, do a little salsa; set your sail to cruising the caribbean!  

It’s challenging to think up something that is fast, yummy to eat with just a few main ingredients right?  Well, you don’t need much for this recipe yet the combination is kapow awesome!

Caribbean Taco filling

Do you ever dream about food?  I kept dreaming of black beans last night because I knew I wanted a recipe to share that utilized them with sweet potatoes but the sweet potatoes needed to be al dente not soft like you would traditionally eat them…  If you have a can of black beans and a sweet potato, this recipe will be ready in 10 minutes.

If you like me, love your Instant Pot then it will be 40 minutes to cook the dried beans (no soaking necessary!) and then you can be eating these tacos.

How do you make sweet potato cook quickly?   Peel it, cut it in long thin matchsticks and presto it takes a moment to cook.

It takes just one skillet, and of course a cast iron skillet heats great and you don’t ever have to worry about it flaking non-stick chemicals into your food. And with the pre-seasoned skillets you can even get a new one and use it the same day.

The spices you have I’m sure in your cupboard and they will create a carribean jerk flavor or you can purchase jerk combo. You can keep the seasonings simple too.  The season is not too spicy but just enough zip to start you salsa dancing!

ps they are kid tested and loved.  My grandson wouldn’t eat his dinner (not a carribean taco) but he did eat a carribean taco and asked for more.

Caribbean Tacos

another side note-the fuji apple chip recipe…if you haven’t tried them yet, do so..my grandson, Dimitri ( age 2-1/2) kept going into another room getting a step stool bringing it into the kitchen to grab more of the apple chips.  Then when they were gone, he found a few more apple chips in my office/studio!

Caribbean Tacos

Black beans, sweet potatoes and Caribbean spices create fast, yummy vegan tacos!

Ingredients

  • 1 tablespoon olive or avocado oil
  • 1 garnet sweet potato, peeled, julienned (matchstick thin)
  • 1/3 yellow onion, sliced in rounds
  • 3 large cloves garlic, minced
  • 1-1/2 cups black beans, drained (if canned rinse and drain them)
  • 4 corn tortillas

Jerk Seasoning - see recipe notes if you don't have all these spices/ DONT PUT THESE DIRECTLY On TACOS YET

  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon fresh ground pepper
  • 1/4 teaspoon allspice
  • 1/8 teaspoon cinnamon
  • 2 pinches nutmeg

Garnish

  • 2 tablespoons (optional) fresh chopped cilantro
  • 4 slices avocado

Instructions

Jerk Seasoning

  1. mix spices together in a cup, mix well. use 2 teaspoons in this recipe. Reserve the rest for other caribbean recipes.  

Caribbean Taco Filling

  1. Heat cast iron skillet over medium high, add 1 tablespoon olive or avocado oil,  sliced onion saute for 1 minute ,add julienned sweet potato, saute for another minute. 

     Add minced garlic and black beans. 

    Add 2 teaspoons of jerk seasoning.  Once hot (approx 1-2 minutes) put 1/4 of mixture onto each grilled tortilla. (see below).

To heat tortillas

  1. Place tortilla on gas stove burner over medium low fire, flip over with tongs once toasty. Heat the other side.  Serve immediately with the Caribbean filling.

  2. Garnish with chopped fresh cilantro and avocado slice. Enjoy!

Recipe Notes

If you don't have all the spices, these tacos are great with just paprika, parsley, thyme, cayenne pepper and you can add allspice if you have it.  Use 1-1/2 teaspoons of this mixture, save the rest for another use.  

Products used in this recipe:

10" cast iron skillet, it is a work horse and you can use it forever, it will never wear out!

An Instant Pot is another item I use all the time, it is so great to go from dry beans to cooked black beans in less than an hour!  Canned items just aren't that good for us to use..
