Fig season is just is too fast! It is here and blink twice and darn it- they’re gone! Fortunately there are dried mission figs in the market and since that is what you need for Fig, Ginger Grain-Free Granola it makes it easy!
If you don’t like ginger, I know you may be saying, I don’t think I’ll make that recipe! Wait a minute! You can swap out the candied ginger for cinnamon glazed pecans instead- see there are always options!
In recipes as in life I think it is important to realize there are always options. In fact that is one of my favorite phrases to tell myself when I feel stuck. Ok, back to the recipe, if you are not adverse to grains you may add in some oats, I particularly like old fashioned oats for granola, the thicker oats can stick to the other ingredients without disappearing. For this recipe I put the toasted nuts in my food processor for a quick chop,
if you want coarser nuts chop them by hand, it will just take you a couple of extra minutes. I like keeping already toasted nuts around as I use them a lot for cooking and nibbling on. An easy way to toast them is either in a dry skillet on the stove or a toaster oven. I put it on toast – function and wah-laaa! In a few minutes it’s ready. Of course you don’t have to toast the nuts for this recipe but it gives the granola extra depth of flavor.
Don’t put the figs in the food processor though it would make your blade all gummy and you don’t want the dried figs chopped too small, they will become too dry otherwise in the final product. Candied ginger gives this recipe spice and sweet in the same bite – oh yum! And I love love the combination of sweet ‘n spicy don’t you? The candied ginger you will set aside, and not bake it while the other ingredients have become friends in the oven for a bit.
I like to show you that I ate the whole bowl full so that you will know yup, it must be pretty good, she ate it all! Of course since I made it, I have eaten it for several morning, yumm-my! And I love showing off this antique spoon that I have had since I was a little girl. It has engraved building on it with gold plating (?) on the spoon.

Fig Ginger Grain-Free Granola
Grain Free Granola with dried figs and candied ginger, an easy yummy start to your day!
- 1/2 cup toasted walnuts
- 1/3 cup toasted pecans
- 1/3 cup toasted almonds
- 1/3 cup raw pumpkin seeds
- 1/3 cup sunflower seeds
- 1/4 cup coconut palm sugar
- 1/4 cup almond flour
- 3 tablespoons ground flax seeds
- 3 tablespoons (optional) hulled hemp seeds
- 1/4 cup liquid coconut oil or avocado oil
- 1 teaspoon vanilla extract
- 1 cup/ 5 ounces dried mission figs, chopped coarsely
- 1/3 cup/ 1.8 ounces candied ginger, cut in long slivers, set aside
Preheat oven to 325 degrees.
Chope either by hand or in food processor nuts and seeds, mix all dry ingredients together in medium bowl, add oil, vanilla and figs, mix well, put on parchment or silpat covered rimmed baking sheet pan.
Bake 15 minutes, cool and add candied ginger. Store in covered jar.
Makes 4 cups. Serve with your choice of milk.
You don't have to use already toasted nuts but I think it tastes better. I keep jars of already toasted nuts, ready for nibbling on or using in recipes on my kitchen counter.
To toast nuts, you can toast pecans and walnuts together but not almonds as they take longer to toast. Either toast them in a skillet or in the oven. I use my toast oven and on toast cycle. If toasting in skillet watch closely as it won't take long!
