With autumn here, sweet potatoes are so much fun to create with! Sweet Potato Black Bean Fritters are a great lunch, light dinner or an appetizer.
See? These plus a few dry ingredients is all it takes!
It takes just minutes to prepare and just that quick to cook too! When I create a recipe, I get to go through several rounds of testing, fortunately there are family members that will give me an honest critique which I really appreciate! These disappeared rather quickly so that is a pretty good indication that it is a winner! And most importantly I really, really liked them!
This recipe uses two of my favorite foods, sweet potatoes and black beans. If you have an Instant Pot, so nice to cook up a batch of black beans, reserve some of the black beans for the Sweet Potato Black Bean Fritters then use the rest of the black beans for making my black bean chili. That’s just what I did with the second batch of Sweet Potato Black Bean Fritters that I made. Or if you are using canned black beans you can use the leftover black beans for a smaller portion of black bean chili and use it for my Black Bean Huevos Rancheros…super yummy!
Please note use either coconut or avocado oil but not olive oil for cooking these. The fritters cook over medium high heat and olive oil is to be used for low temperature cooking as it has a low smoke point.
You can make these into burgers size patties if you want or keep them petite.
By keeping them petite the fritters take 2-3 minutes to cook. One thing I do in this recipe to cut down on time is microwave the sweet potato. If you have time, bake it or steam it that is awesome, then follow the directions. I am not a supporter of microwave cooking; so you will rarely see me give instructions for cooking in the microwave. Why do I not use a microwave very often?
I tried heating up flour that I kept in the freeze and then baked bread, however the bread would not rise. Now you may think well Betty, the yeast was old or the flour was too hot, I might have thought that too, but I did it again on another occasion and got the same result. And I had made sure the flour was only warm. It appears that the microwave killed the flour. That is my own theory and I’m sticking to it :). So it only makes sense that microwaved food is not going to be very amazing for us.

Sweet Potato Black Bean Fritters
Easy and yummy sweet potato black bean fritters great for appetizer or light lunch.
- 1/2 cup cooked sweet potato (7 ounces) medium sweet potato
- 1/2 cup black beans, cooked rinse and drain if canned
- 1 egg
- 1 tablespoon maple syrup
- 1 medium clove garlic, minced or 1/2 teaspoon garlic powder
- 3 tablespoons all-purpose flour
- 1/2 teaspoon kosher salt
- 1/2 teaspoon lemon pepper
- 1/2 teaspoon onion powder
- 2 pinches each: ground nutmeg, cayenne pepper
- 3 tablespoons coconut or avocado oil for frying
- 3 tablespoons (optional) plain yogurt or crème fraîche
Prick uncooked sweet potato with fork; Cook sweet potato in microwave on high for 2 to 2/12 minutes until soft. Cool for a few moments, then scoop out sweet potato from the skin; place in medium size mixing bowl.
Add black beans, egg, minced garlic (if using fresh garlic add it now if garlic powder add with dry ingredients), mix well.
Put dry ingredients in small bowl or cup, stir with fork, then add to sweet potato black bean mixture, stir with fork to blend.
Heat coconut or avocado oil in medium size (10-inch) cast iron skillet over medium high heat.
Using 1/8 cup measuring cup or heaping spoonful, put dollops of sweet potato black bean fritters in hot oil, turn over after approximately 1 minute once lightly brown, turn again to cook other side. I set the fritters on their side to cook the edges.
Serve over baby arugula or baby kale with a drizzle of plain yogurt or crème fraîche. Enjoy!
Can make into burgers instead of fritters use 1/3 cup size makes 4 burgers- cook approximately 2-3 minutes on each side until lightly brown.
