Hey there friends! Where have you been? I missed you! Oh, yes, you’re correct, I have been the one missing. I wasn’t truly missing just very quiet… A cold took me down but I’m back! I didn’t even feel like getting the veggies to create this amazing Creamy Green Smoothie.
If I had, I know I would have felt better in a flash! This recipe is a variation from Dr Steven Gundry’s Green Smoothie that you could find in his book, Plant Paradox. He is a heart surgeon that has done a lot of research on type of foods to eat for longevity and reduce so many of the chronic diseases that we are plagued with such as, type 2 diabetes, autoimmune diseases and arthritis. If you are thinking that a green smoothie would not taste good, well, this one does and it is fast and easy! I suggest using it as breakfast to give you a great boost for your day, but you coud just as easily drink it for any meal. There is avocado to make it creamy and to stick with you all morning long. There is fresh mint which is so refreshing and fresh lemon juice. There is a bit of a sweetener to cut the some of acidity of the lemon.
And I know you’re thinking.. hmmm doesn’t sound quite so healthy now… you could use local honey or a few dates, but what I use is cassava syrup. Remember the cassava flour that we used in the Grain-Free Mocha Chocolate Chip Muffins? Well, this sweetener is made from the root of cassava plant too. Because it comes from a tuber it is a better alternative than sugar, and you can read Dr. Gundry’s book to learn more. It has a nice neutral sweet taste with no odd aftertaste. I like to add broccoli sprouts to my Creamy Green Smoothie too. Remember from the broccoli Sprout Protein Shake and how amazing the broccoli sprouts are for our bodies? Ok, that’s it my friends, here is to your health and a yummy breakfast! Enjoy!
